Smoked Chicken Mandi!

Hello! Hope you're doing well! I haven't posted here for a while now lol! Excuse me I am limited with time and hadn't had the time to cook anything new! This recipe is an old one I have done it a while ago so I apologize there aren't any pictures of the exact steps!
but it is easy to follow and really good for a delicious impressive lunch meal ;)
here we go ♡

Ingredients:
  • A whole chicken cleaned and cut into parts.
  • Onions cut into small pieces
  • garlic & ginger beaten and mixed
  • Cinnamon (1 stick), cumin, cardamoms (هيل 5-7 pieces is enough) , kurkum, black pepper & salt.
  • olive oil & red pasta sauce
  • 1&1/2 tea spoon curry powder
  • Maggi (optional)
  • rice (washed and soaked under water for about half an hour)
  • potatoes if you would like.

Steps:
  1. In a deep pot fry the onions and then add the ginger & garlic till it gets a red-ish color then add the chicken (seasoned to preference, salt & pepper )
  2. After step one wait for about 10 minutes (so that the chicken-ish flavor tones down) then add the spices (cumin, kurkum, curry powder,cardemums, cinnamon & black pepper)
  3. Add half a piece of maggi (optionary) or just salt then in the same pot pour water just enough to cover all the chicken & close on the pot with its lid.
  4. Wait until you see the chicken is cooked then remove the chicken pieces. (you will now cook the rice using this water that is in the pot.)
  5. Add the rice to the same pot. (The water mix in pot must cover all the rice)
  6. While waiting for the rice to get cooked, in a small bowl mix red pasta sauce with olive oil then grease the top of the chicken pieces with it and into the oven till the chicken has that good red-ish color from top (as shown in the picture)
    * at first the oven is heated only from the bottom part and in the last couple of minutes you close that and open the upper part of the oven.
  7.  Fry some seasoned potatoes cut into small quarters to be added to the dish. ( I used potato seasoning mix I bought from carrefour)
  8. When the water in the rice pot dries out mix the rice by bringing the bottom portion upwards and taking the upper portion downwards using a big spoon, do that every now and then.
  9. When the chicken is ready off the oven, and the rice is ready, and the potatoes are ready, you top the rice with the chicken pieces & potatoes while it is in the pot. Keep the pot under very low fire, squeeze into the rice a small cup (فنجان) of olive oil & drop in it a small piece of heated cole (فحم) as shown in the picture. You do this so that the food gets a smoked grilled flavor.
  10. Right away after doing step 9 you close on the pot with aluminum and its lid. Wait 15 minutes and your food is ready! (The aluminum must already have been set to be quickly closed, cause you don't want to lose the smoke)
  11. ENJOY ;) 
*I cooked for 3 people here so I did not use a whole chicken I used chicken breasts.
*You can eat it with a side of yogurt mixed with cucumber & black pepper.

Seems like alot of huge steps right ? but it is just alot of explanation, it really is easy stuff haha xD.

Chocolate & Cinammon rolls

Hello fellow human beings!
This is a VERRRRY good dessert and easy to make ❤ you must try it out seriously *-*!
(I took the recipe online, some recipes I take online -will tell you if it is taken from the great web- and adjust to them abit or copy them straight off, I still post them here cause who knows maybe you will find my explanation easier :D) I don't take credit for this one!

Here it is ,ingredients:
  • Slice bread
  • Sugar powder
  • Cinnamon powder
  • Nutella or kinder chocolate
  • Strawberries cut into slices
  • A bit of butter (for the pan)
  • A mix of egg,milk and vanilla extract

Steps:
1-use that tool that spreads a pizza dough to make the slice bread thin and spread out.
2- On the right side of the slice bread put on some nutella or kinder, then top it with the strawberry slices and roll the bread so it looks like a roll sandwich.
3- Dip the rolls into a mix of egg, milk and vanilla then to into a hot pan with a small amount of butter till the bread color turns slightly red-ish color!
*For easier handling stick a toothpick to keep the roll rolled
4- sprinkle on top a mix of Cinnamon & sugar powder!
5- ENJOY ;) so so good :')

Grilled Chicken & Turkey Salad!

Hello! Been over a week since I last posted here I think! Hope you are doing well ♡!
Here is an easy , delicious and healthy salad recipe for you! ;)

Ingredients:
  • Chicken breasts
  • Chicken seasoning:
-Garlic oyster sauce
-Lemon&black pepper seasoning (shown in picture below, you can get it from carrefour, very useful! )
-Chili seasoning (shown in picture below, you can get it from carrefour!)
- A pinch of salt & pepper (just a pinch cause the above seasonings include them.)
  • Cut lettuce
  • Smoked turkey breasts cut into slices. (as shown in picture below)

For the dressing mix:
  • Honey
  • Vinegar
  • Mustard (a drop)
  • salt&pepper
  • Olive oil
*The amounts are to preference, just add a bit of each till you realize the perfect mix.

Steps:
1- Season the chicken breasts and let them rest for about half an hour.
2- Grill the chicken breasts (I used an electric grill)
3- When chicken is ready slice it as shown in the picture.
*to know if it is ready cut the "fattest" piece and check.
4-On a bed of lettuce add the sliced turkey then the chicken.
5- Add the dressing and ENJOY ;)!!

"Italian" Crepe!

Hello! Happy weekend everyone!!!! ;)
It was just me and my two sisters having lunch at home so I thought why not make crepes :D! Tried out a new one "italian crepe" and it was yum!

* I've written how to make a crepe twice before so just go to my "mushroom&cheese crepe" post so I don't have to write it again (hehe sorry xD)
So We assume now you've done the crepe mix as told and you have it ready to start cooking.
Note : if you don't have a stickless pan, use a normal one and just spread on it some butter so it would not get sticky.

Ingredients :
  • Beef mortadella (or preferably cooked pepperoni)
  • black olives (optional)
  • Mozarella cheese
  • Sliced Mushrooms
  • Red pizza sauce
  • A bit of thyme
Steps:
1- In a preheated stickless pan, using a big soup spoon pour the crepe mix ,and while pouring spread it in big circle-ish movement to make it thin. (keep the heat medium, not too hot.)
2- Wait till the upper side of the crepe turns from liquid to "solid" then spread on the left side of the crepe the red sauce, sprinkle some thyme powder then add the beef mortadella, mushrooms and then cheese. (you can add black olives if you'd like.)
 3- Wait about half a minute (You wait to make sure the crepe is cooked enough not to get cut while closing it) then close on it with the right side of the crepe.

 
4- Wait about two minutes then try to flip the crepe if you can, if you feel it is going to get messy and cuts then don't flip it, just wait more till the cheese melts and press on it every now and then.
5- It is ready to be served!! ENJOY ♡

Chili pasta !

Hello! Hope you are doing well! :D I've had a week of sickness and not feeling well haha but elhamdulilah I am fine now ♡! Not that you would care but maybe you do xD okaay okay it was a lazy day so I wanted to do something quick and easy!
PASTAAA ♡

Ingredients :

  • Pasta
  • Pasta sauce (used the one in the picture below)
  • Chicken breasts or thighs (preferably breasts but we ran out so I used chicken thighs, cut them into pieces after they were cooked)
  • Red bell pepper cut into small pieces , cut onion and garlic.
  • Chilli seasoning (shown in the picture below)
  • Thyme (زعتر)
  • 1 1/2 table spoon coconut powder
  • A pinch of chili powder


Steps:
1- Season the chicken however you'd like (salt, pepper & a piece of cinnamon into the water.) In a pot with water enough to cover the chicken start boiling the chicken until ready. (20 minutes or so)
2- while chicken is getting cooked start cooking the pasta. (Heat a pot with water enough to cover all the pasta till it boils then add the pasta and wait for it to get cooked)
3-When chicken is done cut it into pieces.
4- In a sauce pan with as little oil as possible fry the onions until color is red, then add the garlic and pour in the pasta sauce and stir.
5-Add to the mix the chicken ,red pepper, chilli seasoning, thyme and coconut powder then stir for about 5 minutes and it's ready! :D
6- Pour the mix into the pasta ,mix it and ENJOY ;)

*didn't know what to call it.so called it chili pasta cause its abit spicy lololol xD

Ginger Chicken with Fried Rice.

Hello humans ;D!! I hope you are doing good! So today I invited some friends over for lunch and cooked them some fried rice with ginger chicken "thing" *still don't know what to name it bahahah xD*
Okay here we go!!



Ingredients :

  • Two whole chickens
  • Cabbage
  • Soy sauce- Garlic oyster sauce -Tomato sauce
  • Mixed vegetables and corn.
  • 2-3 cups of rice
  • Ginger, Onion & garlic.
  • chicken seasoning (whatever you like, I seasoned it with salt,black pepper, chilli seasoning and oyster sauce.)
  • 3 table spoons mozarella cheese (optional)
  • Quarter a cup of milk

Steps :
1- Clean up the chicken and season it then let it rest for 10-15 minutes. (If you don't like to get dirty LOL just use boneless chicken breasts, it will look nicer too haha )
2- Heat up some water (the water should be enough to cover all the chicken pieces) and when the water starts boiling add the chicken and keep it until it is ready (15-20 minutes)
*Add half a piece of maggi if you want more flavor, I didn't. 
3-Boil the rice until ready and put aside. (don't forget to add a bit of salt into the water)


For the chicken : 
1- In a blender blend the ginger (peeled), onion and garlic together with a table spoon of water to just liquidate it.
*I like the word liquidate hehehehe.
2-Once the chicken is ready, cut the chicken into bits off the bones.
3-In a hot pan mix the ginger mix with the tomato sauce,oyster sauce,soya sauce and quarter a cup of cooking cream or milk. Then add the chicken and stir. Add a handful of corn if you'd like and the mozarella cheese and stir. Keep it under fire for about 10 minutes.

For the rice:
1-In a pan put a small amount of oil and then put in the mixed vegetables,cut cabbage and corn, add a table spoon of soya sauce and two table spoons of oyster sauce and stir.
2-Five minutes later add the ready and drained rice into the veggies pan and mix it well.

Both are now ready to be served!

Mushroom & Cheese Crepe!

Good morning humans ♡
Hope this day is going well for you! As for me my weekend already started ;) woke up on my own (without any alarm wohooo!!!) And decided I want a really good breakfast hehehe.
So here it is! Mushroom&Cheese crepe! Takes less than half an hour to make,soooo easy!! :D

(Portion is for 2 to 3 people)
ingredients:
  • 1 Egg
  • 3/4 table spoon of butter
  • Half a tea spoon salt
  • A pinch of sugar
  • A tea spoon of ground thyme زعتر مطحون (optional, you may replace it with something else or even nothing ,I like thyme)
  • A pinch of black pepper
  • Quarter a cup of flour
  • For the stuffing : (sliced mushroom, mozarella cheese & cheddar) 
*I know it seems like alot for an "easy" recipe but it's really not xD!

Steps: 
  1. Mix the milk and butter under fire till it boils.
  2. In a bowl mix the egg, salt, sugar, pepper and thyme then add the flour and mix. Slowly add the milk mix while stirring, it will result to a slightly thick liquid mixture. you don't want it to be very thick.
  3. In a preheated stickless pan cook the crepe from one side ,basically using a huge "soup" spoon you take the mixture and pour it into the hot stickless pan in a circle-ish movement, spread the mixture as soon as it touches the pan because it turns solid quickly.
  4. When it turns golden from the bottom side flip it for about only half a minute then flip it again to put the stuffing.
  5. On the left side of the crepe add mozarella cheese, sliced mushrooms and cheddar cheese then close on it with the right side (like an omlette!)
  6. Flip it two or three times till you feel it is ready to be served!
  7. ENJOY ;)♡♡♡
