Ginger Chicken with Fried Rice.

Hello humans ;D!! I hope you are doing good! So today I invited some friends over for lunch and cooked them some fried rice with ginger chicken "thing" *still don't know what to name it bahahah xD*
Okay here we go!!



Ingredients :

  • Two whole chickens
  • Cabbage
  • Soy sauce- Garlic oyster sauce -Tomato sauce
  • Mixed vegetables and corn.
  • 2-3 cups of rice
  • Ginger, Onion & garlic.
  • chicken seasoning (whatever you like, I seasoned it with salt,black pepper, chilli seasoning and oyster sauce.)
  • 3 table spoons mozarella cheese (optional)
  • Quarter a cup of milk

Steps :
1- Clean up the chicken and season it then let it rest for 10-15 minutes. (If you don't like to get dirty LOL just use boneless chicken breasts, it will look nicer too haha )
2- Heat up some water (the water should be enough to cover all the chicken pieces) and when the water starts boiling add the chicken and keep it until it is ready (15-20 minutes)
*Add half a piece of maggi if you want more flavor, I didn't. 
3-Boil the rice until ready and put aside. (don't forget to add a bit of salt into the water)


For the chicken : 
1- In a blender blend the ginger (peeled), onion and garlic together with a table spoon of water to just liquidate it.
*I like the word liquidate hehehehe.
2-Once the chicken is ready, cut the chicken into bits off the bones.
3-In a hot pan mix the ginger mix with the tomato sauce,oyster sauce,soya sauce and quarter a cup of cooking cream or milk. Then add the chicken and stir. Add a handful of corn if you'd like and the mozarella cheese and stir. Keep it under fire for about 10 minutes.

For the rice:
1-In a pan put a small amount of oil and then put in the mixed vegetables,cut cabbage and corn, add a table spoon of soya sauce and two table spoons of oyster sauce and stir.
2-Five minutes later add the ready and drained rice into the veggies pan and mix it well.

Both are now ready to be served!

Mushroom & Cheese Crepe!

Good morning humans ♡
Hope this day is going well for you! As for me my weekend already started ;) woke up on my own (without any alarm wohooo!!!) And decided I want a really good breakfast hehehe.
So here it is! Mushroom&Cheese crepe! Takes less than half an hour to make,soooo easy!! :D

(Portion is for 2 to 3 people)
ingredients:
  • 1 Egg
  • 3/4 table spoon of butter
  • Half a tea spoon salt
  • A pinch of sugar
  • A tea spoon of ground thyme زعتر مطحون (optional, you may replace it with something else or even nothing ,I like thyme)
  • A pinch of black pepper
  • Quarter a cup of flour
  • For the stuffing : (sliced mushroom, mozarella cheese & cheddar) 
*I know it seems like alot for an "easy" recipe but it's really not xD!

Steps: 
  1. Mix the milk and butter under fire till it boils.
  2. In a bowl mix the egg, salt, sugar, pepper and thyme then add the flour and mix. Slowly add the milk mix while stirring, it will result to a slightly thick liquid mixture. you don't want it to be very thick.
  3. In a preheated stickless pan cook the crepe from one side ,basically using a huge "soup" spoon you take the mixture and pour it into the hot stickless pan in a circle-ish movement, spread the mixture as soon as it touches the pan because it turns solid quickly.
  4. When it turns golden from the bottom side flip it for about only half a minute then flip it again to put the stuffing.
  5. On the left side of the crepe add mozarella cheese, sliced mushrooms and cheddar cheese then close on it with the right side (like an omlette!)
  6. Flip it two or three times till you feel it is ready to be served!

Oreo Ice Cream Cake!

Hello humans and aliens, I hope you are all doing well!! I've had such a fun day!! Baked this yummy oreo ice cream cake for my friends BBQ night! AND IT WAS FUUUN ♡ we tried flying Chinese lanterns and then they were a fail and then the last two actually flew but one fell and we were scared it would fall on a tree and burn it and then we go to jail *-* HAHA OKAY okay here is the recipe!!! ;)

Ingredients :
  • Ready cake mix (you can make the cake yourself but I didn't have the time for it)
  • Oreos
  • Nutella
  • Quarter a cup of milk
  • Vanilla ice cream (I wanted to go for London diary but I did not find their vanilla flavor -.-!!!!)
  • Flake for the design
  • A thread (to cut the cake into half)

Steps:
1- Bake the cake as in the instructions of the box
2- While the cake is baking, work on crushing the oreos to mix them with the vanilla ice cream (such a work out haha)
*I left some of the crushed oreos for designing the cake
3- mix the crushed oreos with the ice cream and then leave it in the freezer until needed.
4- When the cake is ready, take a thread and using the thread cut the cake into two halfs (as shown in the picture below) this is an easier way to cut the cake to make it straightly cut and even instead of using a knife! (Gently separate the two halfs)
5-On the bottom half of the cake circle it with halfs or oreos (As shown in the picture below, I do this to keep the ice cream bounded...or so I believe)
6- Put the ice cream mix in the bounded area and straighten it with a big knife or spoon.
7-Close it with the other half of the cake
8-Now , under fire mix the milk with two huge table spoons of nutella so the nutella gets lighter and spread the mix on the cake then design however you like to.
*I designed with crushed oreos, oreos and crushed flake.
*try to do it quickly so the ice cream wouldn't melt while you're at it LOL XD
8-Let it rest in the freezer for a little while.

Texas Fries!

Guess what !? Chilis' Texas fries is so damn easy to copy ;)!!!!! Tastes really good! :D made this tonight and the family Loved it , give it a try ! ;)

Ingredients :
  • Cut potatoes for the fries or ready frozen fries to be fried.
  • Parsley
  • Cheddar or mozarella cheese (or both!!)
For the salsa
  • Minced beef
  • 2 tea spoons of Cumin (سنوت)
  • 1 1/2 tea spoon of salt
  • 2 tea spoons black pepper
  • chili spice
  • 3 table spoons oyster sauce (optionary)
  • Chopped onion & garlic
  • Chopped red pepper
  • Red tomato sauce

Steps :
1- Start frying the potatoes and while at it work on the salsa!
*when the fries are ready set aside ontop of the kitchen tissue paper to absorb the oil off it.
2-In a pot start frying the onions, when it gets red add the garlic and stir.
3- Add the minced beef then season it with the salt, pepper, cumin & chili. Let it cook for about 7 minutes.
4-Add the oyster sauce & the tomato sauce. Stir then let it cook for about 10-15 minutes.
5- Add the red pepper and a small amount of the preferred cheese and stir for 3 minutes (the salsa is ready by now! ♡)
6-in a plate that is heat resistant put the fries, add on it the salsa, then top it with the preferred cheese and into the oven till the cheese melts! 

7- top it with chopped parsley and ENJOY!!! ;)

*I prefer mozarella cheese! 
*Have some blue cheese dressing to dip it in.
*I would've added beef strips cut into tiny pieces ontop of the cheese before going into the oven but I lacked the ingredient haha xD

Potato Boats!

Hello :D!
Here's a Reaaaaally good recipe of potato boats!!! *-*

Ingredients:
  • Potatoes
  • Salt & pepper
  • One or two table spoons of butter
  • Cut Parsley
  • Beef strips
  • 1/4 a cup of milk
Steps :
1- Wrap the potatoes with aluminum foil with a drop of water and into the oven till they are cooked (20-30 minutes).
2-When the potatoes are ready cut them into halfs, unstuff them with a spoon and leave the surrounding "shell" part aside -be gentle :P-
3-Fry the beef strips & cut them into tiny pieces.
4- when unstuffing gather the stuffing of the potatoes into a pot that will then go under fire, add the milk, salt, pepper, parsley, butter & the fried beef strips then stir under fire for about 5 minutes.
5- When the mix is creamy & ready re-stuff the potato boats with the mix!
6- Top them with mozarella cheese and get it into the oven till the cheese melts
7- ENJOY :D !!

* I took the concept online and then played with the ingredients.
* You can add cut mushrooms into the mashed potato mix if you'd like.
* I cooked this a while ago so I do not have pictures of the steps sorry :$!

Grilled Chicken Pasta!

Hello fellow human beings! hope you are having a good day! Here's an awesome white sauce grilled chicken pasta with cherry tomatoes and mushroom that I made yesterday for a friends gathering! ♡

For the chicken :
Season the chicken breasts with :

  • Garlic oyster sauce.
  • Pepper&lemon seasoning.
  • Salt (half a tea spoon will do)
  • 2 beaten garlic coves.

And let it rest for at least 15 minutes.
Now you can grill it using an electric grill or put it into a greased pan and into the oven like I did in the picture below, flip it every now and then.

* This easily done grilled chicken can be used for other dishes like yummy salads ;)

While it's cooking do the pasta and sauce.

Pasta & sauce ingredients :

  • Pasta
  • Pinch of salt & oil (for the pastas water)
  • Cooking cream
  • Pepper
  • A drop of garlic oyster sauce
  • Mushrooms (cut in halfs)
  • Cherry tomatoes (cut in halfs)
  • Rosemary&Olive seasoning
  • Thyme
  • Table spoon of flour (to thicken the sauce)


Steps :
The pasta :
1- Heat water -with a bit of salt and oil- for the pasta and when the water starts boiling put in the pasta. (Continue with the sauce till the pasta is ready, when it's ready drain it and set aside till the chicken & sauce are ready)

For the sauce :
2- Heat the cooking cream under fire
3- spice it up with pepper, rosemary, thyme & oyster sauce. (Add the flour if you want it to be thicker and stir)
4-when it gets heated (just about to boil) add the mushrooms.
5- Wait a couple of minutes for the mushrooms to get cooked ,then ,before closing the fire by minutes add the cherry tomatoes and stir.
(You do not want the cherry tomatoes to get very squishy xD if that's the proper word haha)
And the sauce is ready!

*I LOVE Thyme in such pasta so I usually put alot of it! the seasoning amounts can be played to preference.
* If you do not have cooking cream you can substitute it by a mix of (Milk, cream cheese and flour)


When the chicken& sauce are ready, cut the chicken into slices, pour the sauce into the pasta and top it with the chicken!

Mushroom&Pepper Steak

Hello :D! Another post today, it's been a nice cooking day hehe! :D
Made a yummy steak with mushroom n pepper sauce *-* sooo good! With a great side --> grilled vegetables! ;)

Ingredients :

  • Steak slices
  • Cut parsley (بقدونس)
  • Spices : salt & black pepper, the chili&garlic and the garlic&pepper spices.
  • Oyster sauce or garlic oyster sauce.
  • Tea spoon of vinegar














Steps :

1-season the meat with the spices, oyster sauce, vinegar and parsley then let it rest for atleast two hours.
2- start grilling to your preference ;) I used an electric griller as shown under. Make sure not to over cook it or it will be dry!














Mushroom sauce :

  • Cooking cream
  • Mushrooms cut into slices
  • Pepper 
  • Garlic powder
  • Oyster sauce
  • Tea spoon of flour to thicken it
  • Tea spoon of butter


Mix the above ingredients under fire till you get the color of light brown. You can play with the amount of ingredients as how you'd like it, taste it though.

The grilled veggies :
-Potatoes (cut in cubes)
-Mushrooms (cut in halfs or quarters.)
-Small corn (cut in half)
-Red pepper (cut into small pieces, you can go for any other color but I love red pepper!!!!)

Steps :
1- Boil the potatoes with potato spice till it's ready, drain and keep aside. (see in the previous post about the spices)
3- Season the veggies with rosemary spices and thime (see in the previous post about the spices)



3-In the griller, grill the corn ,red peppers & mushrooms.
4-When ready, put the veggies in a bowl and add the potatoes, add a bit of salt,olive oil and parsley and it's ready!! ;)

Sweet Crepes!

I did not think that making crepes is this easy! Enjoyed it and loved it! ...(I was jumping around the kitchen excited that it is going well as it's my first time hehe)
I took the crepe recipe from a website and then added whatever I liked on it.

Ingredients :

  • 1 cup of milk
  • 3 table spoons butter
  • 3/4 cup of flour (or 96 grams)
  • 1 table spoon sugar
  • 1/2 tea spoon vanilla extract
  • A pinch of salt
  • 3 eggs


Steps :
1- Boil the milk with butter under fire




2- in a big bowl mix the eggs with the sugar, salt, vanilla and then add the flour.


3- slowly little by little add the milk mix and keep on stiring. You will eventually have a liquid mix which is sliiiightly thick.



Now ! The tricky part is actually cooking the crepe, because it is liquid and you do not want it to form a thick layer on the pan!

4- heat a stickless pan ( you don't want the mix to get sticky ,I used the thing in the picture under, it is awesoome!)



5- When it is hot enough, with a large soup spoon take the mix and pour it into the pan, pour a little and then move it in a circle to spread the mix to not make it so thick, then pour some more in the needed places and do the same, might need some practice so the first one or two crepes might look abit odd LOL.


















6- wait for a while and then if the crepe is golden-ish from the bottom flip it and wait a bit till it is ready from both sides!

Now that the crepe is ready fill it with what you like
my ingredients :

  • Milk ( a very small amount, فنجان ممكن)
  • Strawberries cut into slices
  • Nutella
  • Whip cream for the side


1-Mix the milk with the nutella under fire till it's well mixed. ( you can apply nutella without milk straight to the crepe but I Iike to add a bit of milk because I don't like it to be so heavy, so its optional)



2-stuff the crepe with the nutella mix and strawberries, put some whipped cream or ice cream as a side and serve.

Mozarella&Red Sauce Chicken!

Kind of awkward I don't know if I should say hello every time I post here bahahah xD ... hello anyways! Heres an easy awesome recipe, played in the kitchen alittle at 12 am cause I didn't have dinner haha!

Ingredients :
  • Chicken breasts (as the amount in the pictures, I am very sorry I don't know how to name the amount, I'll figure it out for next time)
  • 1/2 A teaspoon salt & 1/2 a tea spoon pepper or a bit more if you'd like
  • Mozarella cheese (as much as you'd like!)
  • Pasta or pizza red sauce
  • Spices for the chicken.. you can choose whatever spices you like but here are my favorites (you can get them from carrefour) I used both the chili&garic and the rosemary one!



Steps :
3-Cut the chicken breasts length wise to thin slices.
2-Spice the chicken with salt, pepper & the other spices, let it rest for a while.
2-Preheat the oven.
3-Now! Put some of the red sauce on each chicken slice then add mozarella cheese and roll it. (To keep it rolled stick a tooth pick into it)
4-Top it with a bit of mozarella and thime ( زعتر ) and into the oven!
5-Wait for about 25 minutes or so then take it out ( to know if its ready cut a tiny piece and check)
6- ENJOY IT LIKE I DID *-*

NUTELLA Hot Chocolate!

Chocolate fan? ;)
Here's an easy NUTELLA hot chocolate recipe (yes ! Nutella *-* hahaha)

Ingredients :
-Nutella (start with one table spoon, if you feel it needs more add some more ,you'll know after waiting till it gets darker)
-Cup of milk
- One tea spoon of sugar
-Half a tea spoon of vanilla extract

1- Mix the above ingredients under fire till it boils and the color gets dark, stir with a spoon every now and then to melt the nutella.

For more yumminess (and calories wohoo xD) try this whip cream mix to top the hot chocolate :

Ingredients :
-1/4 A cup of cooking cream
-1/2 Tea spoon vanilla extract
-1 Tea spoon sugar ( add more if you'd like)
- One table spoon philadelphia cheese

2- Mix the cheese with the cooking cream and while doing so add the sugar and vanilla extract. (Use an electric mixer, start with a slow pace then speed up)

Ps: you can play with the amount of ingredients however you like it, mine are the approximates as I don't usually measure how much I put.

Tuna Melt!

My first recipe post yaaay!
Okay this will be a very quick and easy one :D! TUNA MELT! cheesy and yummy ;) the fishy taste is not very obvious btw haha!

Ingredients :
-Tuna
-Mayonnaise
-Mustard (a very little amount)
-Pickles (cut into tiny pieces)
-Tomato (cut into tiny pieces)
-Cheddar cheese (one slice or two)
-Slice bread

Step 1- Mix the mayyonaise, mustard, tuna, pickles and tomatoes.
Step 2- Put the mix on a bread slice and top it with cheddar cheese then another slice bread.
Step 3- Put the sandwich into the bread griller (the one that toasts and squeezes it haha) till it gets toasted.
Step 4- ENJOY IT! ♡♡♡

I was in doubt on whether to start up this blog or not, but since I am on holiday and got lots of free time, why not ? hopefully to continue updating it even when uni is back. 

Basically, I love cooking, one of my awesome instagram followers suggested that I open up a blog about easy  cooking recipes (or hard lololol). Thank you for the idea Sarah Al Meer hehe! I am still not advanced in the kitchen with my humble experience and tools but I enjoy it and hope to gain more experience SO share your thoughts, comments or critique to help me out!
